But there is nothing there about setting up the sampling frequency.
Can you give me advice how to set up the sampling frequency?

Currently, there is no way to automatically set a sampling frequency for the slow analog inputs using the SCPI commands.
I would suggest creating a C program running on the Red Pitaya (you should be able to poll the pin at a few kHz). The other option to achieve your goal is reprogramming the FPGA. Reprogramming the FPGA will give you the fastest and most time-accurate results (in case you want to get results at a specific rate).
